Cauliflower Ceviche

Sweet Potato Bowl

Serves 3

Ingredients

  • 1 head of cauliflower, cleaned and stems removed
  • 1/2 red onion, diced finely
  • 2 roma tomatoes, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup lemon juice, about 3 lemons
  • salt to taste
  • oven baked tostadas, for serving
  • 1/2 cucumber, sliced
  • 1 avocado, sliced
  • salsa or hot sauce, for serving

Directions

  1. Bring a large pot of salted water to a boil. Once boiling, add the head of cauliflower and cook for 5 minutes. Remove from pot and cool in ice water. Pat dry.
  2. Grate the cauliflower against the large holes of a cheese grater. Transfer the cauliflower to a large bowl.
  3. Add the red onion, tomatoes, cilantro, and lemon juice. Mix well and season with salt to taste.
  4. Serve the cauliflower ceviche over tostadas and top with cucumber, avocado, and salsa.
