Barley Salad

Recipe

Serves 8

Ingredients

1 lb. pearled barley

1 cup grape tomatoes, cut in half

1 small red onion, diced small

1/2 cucumber, peeled and diced into

1/2” cubes

3 oz. reduced fat feta cheese, crumbled

4 baby artichoke, cleaned and roasted

and quartered

2 lemons, juiced

4 tbsp. olive oil

3 Tbsp. white wine vinegar

3 Tbsp. minced parsley

Pinch of sea salt

Cook barley to manufacturer’s recommendations. Cool and hold for mixing salad. In a medium-sized bowl, combine the lemon juice, vinegar olive oil and a pinch of sea salt together. Add the red onions, halved grape tomatoes, cucumbers and artichoke quarters. Toss to mix. Add the chilled barley and mix to combine. Finally, add the feta cheese and minced parsley toss and chill until you are ready to serve.
