Ingredients and Preparation

Sweet potatoes, peeled and cubed
Leeks, chopped2
Onions, chopped2
Rib celery, chopped4
Chicken broth, low sodium2 cups
Parsley flakes1 tablespoon
Tarragon1 teaspoon
Water5 cups
Black pepper1 teaspoon
Fat-free evaporated milk1 can (13 ounces)
Chopped chives2 tablespoons
  1. Directions
  2. Combine all ingredients except milk and chives in slow cooker.
  3. Cover and cook on low 10-12 hours, or high 3-4 hours.
  4. Stir in milk during last hour.
  5. If desired, mash potatoes before serving and garnish with chives.
