Medium head cabbage, chopped1
Small carrots, grated2
Small onion, sliced1
Dried red pepper (optional)½ teaspoon
Oregano½ teaspoon
Olive oil1 teaspoon
Salt1 teaspoon
Brown sugar1 teaspoon
Vinegar½ cup
Water½ cup
  1. Directions
  2. Blanch cabbage with boiling water for 1 minute. Discard water.
  3. Place cabbage in large bowl and add grated carrots, sliced onion, red pepper, oregano, olive oil, salt, brown sugar, vinegar, and water.
  4. Place in refrigerator for at least 2 hours before serving.
